Chatta Sitan is made by The Everest Pride LLC, a small company in the United States built around one Nepali snack we could not find on a shelf here.

How it started

A snack we kept carrying from home

In a Nepali house, sitan is the savoury side — the spiced meat or vegetable eaten with chiura, the flattened rice that fills the rest of the plate. It is afternoon food. It is what gets handed to you when you arrive, before anyone has asked whether you are hungry.

We grew up eating it that way and kept looking for it after we moved. Nothing on a US shelf came close. The nearest thing was a bag of jerky next to a box of crackers, which is two products and not one plate.

So we put the plate in a pouch.

The decision

Seal it, don't dilute it

The easy version of this product exists. Mild the spice down, add a preservative, print a mountain on the front and hope. We were not interested in that pouch.

The heat is the heat a Kathmandu kitchen would actually serve. The chicken is halal-certified. It is cooked and packed in a USDA-inspected facility in the United States, in batches small enough that we taste them. The chiura is packed dry, which is why it is still loud when you open it.

Nothing is preserved with additives. The 12-month shelf life comes from how the food is dried and sealed, not from something added to it. No refrigeration, no cooking, no compromise. Where each part comes from is set out on the sourcing page.
